A simple tray of potatoes, leeks and carrots turns into something deeply comforting with the help of this savoury seasoning blend. It is a lovely side for roast meats, but just as good on its own for a light lunch or easy supper.

Prep time: 15 minutes
Cook time: 45 minutes

Ingredients

  • 800g potatoes, cut into chunky bite-sized pieces

  • 3 carrots, peeled and sliced thickly

  • 2 leeks, trimmed and sliced

  • 2 tbsp olive oil

  • 2 to 3 tbsp Scottish Tattie & Vegetable Seasoning

  • 1 tsp sea salt

  • ½ tsp black pepper

  • 150ml vegetable stock

  • 2 tbsp chopped parsley

 

Method

  1. Preheat the oven to 200°C fan.

  2. Place the potatoes, carrots and leeks into a large roasting tray.

  3. Drizzle over the olive oil, then sprinkle with the seasoning, salt and pepper.

  4. Toss well so everything is evenly coated.

  5. Pour the stock around the vegetables.

  6. Cover loosely with foil and roast for 25 minutes.

  7. Remove the foil, toss gently, then roast for a further 20 minutes until golden at the edges and tender throughout.

  8. Scatter with parsley and serve.

One-Pan Sausage, Tattie & Cabbage Supper

This is the kind of practical, hearty supper that never goes out of style. Simple ingredients, one roasting tin, and plenty of flavour. Perfect for busy evenings and brilliant for colder days.

Prep time: 15 minutes
Cook time: 40 minutes

Serves: 4

Ingredients

  • 8 sausages

  • 700g potatoes, cut into wedges

  • ½ small green cabbage, thickly sliced

  • 1 onion, peeled and cut into wedges

  • 2 tbsp olive oil

  • 2 tbsp Scottish Tattie & Vegetable Seasoning

  • 1 tsp wholegrain mustard

  • 100ml chicken or vegetable stock

 

Method

  1. Preheat the oven to 200°C fan.

  2. Place the potatoes and onion in a roasting tin.

  3. Add the olive oil and seasoning and toss well.

  4. Roast for 15 minutes.

  5. Remove from the oven and add the sausages and cabbage.

  6. Mix the mustard with the stock and pour into the tray.

  7. Return to the oven for 25 minutes until the sausages are cooked through and the vegetables are golden and tender.

  8. Serve straight from the tray.

Creamy Potato, Spinach & White Bean Gratin

This comforting vegetarian bake is soft, savoury and satisfying, with potatoes, greens and beans in a creamy sauce. It is inexpensive to make, easy to reheat, and lovely served as a main dish or substantial side.

Serves: 4
Prep time: 20 minutes
Cook time: 50 minutes

Ingredients

  • 700g potatoes, thinly sliced

  • 1 x 400g tin cannellini beans, drained

  • 150g spinach

  • 300ml double cream or half cream, half milk

  • 100ml vegetable stock

  • 2 tbsp Scottish Tattie & Vegetable Seasoning

  • 1 garlic clove, crushed

  • 75g grated cheddar or hard cheese

  • Salt and black pepper

 

Method

  1. Preheat the oven to 190°C fan.

  2. Grease a shallow ovenproof dish.

  3. Layer half the potatoes in the dish.

  4. Scatter over half the beans and half the spinach.

  5. Repeat with the remaining potatoes, beans and spinach.

  6. Mix the cream, stock, garlic and seasoning together and pour over.

  7. Cover with foil and bake for 35 minutes.

  8. Remove the foil, top with the cheese and bake for a further 15 minutes until golden and bubbling.

  9. Leave to rest for 10 minutes before serving.

Forest Barbecue Chicken, Onion & Bean Traybake

Rich, smoky and wonderfully easy, this is a one-pan supper full of deep flavour and very little fuss. The beans absorb all the lovely juices from the chicken, making the whole tray feel generous and satisfying.

Prep time: 15 minutes
Cook time: 45 minutes

Serves: 4 to 6

 

Ingredients

  • 6 chicken thighs

  • 2 tbsp Forest Barbecue Rub

  • 2 tbsp olive oil

  • 2 red onions, cut into wedges

  • 2 x 400g tins butter beans or cannellini beans, drained

  • 250g cherry tomatoes

  • 150ml chicken stock

 

Method

  1. Preheat the oven to 200°C fan.

  2. Rub the chicken with 1 tbsp olive oil and the Forest Barbecue Rub.

  3. Place the onions, beans and tomatoes in a roasting dish.

  4. Drizzle with the remaining oil and toss gently.

  5. Nestle the chicken on top and pour the stock around the edge.

  6. Roast for 40 to 45 minutes until the chicken is cooked through and golden.

  7. Spoon over the roasting juices before serving.

Forest Barbecue Sausage, Sweet Potato & Pepper Traybake

This colourful traybake is a lovely balance of sweetness and smoky spice. It is economical, family-friendly and ideal for a quick prepare-ahead supper.

Prep time: 15 minutes
Cook time: 40 minutes

Ingredients

  • 8 sausages

  • 2 large sweet potatoes, peeled and cut into chunks

  • 2 red peppers, cut into thick strips

  • 1 red onion, sliced into wedges

  • 2 tbsp olive oil

  • 2 tbsp Forest Barbecue Rub

  • 100ml stock

 

Method

  1. Preheat the oven to 200°C fan.

  2. Place the sweet potatoes, peppers and onion in a roasting tin.

  3. Add the olive oil and Forest Barbecue Rub and toss well.

  4. Roast for 15 minutes.

  5. Add the sausages and pour in the stock.

  6. Return to the oven for 25 minutes, turning once halfway through.

  7. Serve hot, with yoghurt or slaw if you like.

Sticky Forest Barbecue Lentil & Vegetable Bake

A lovely meat-free oven dish that is packed with flavour and made from affordable cupboard ingredients. It is hearty enough for supper and reheats beautifully the next day.

Prep time: 15 minutes
Cook time: 35 minutes

Serves: 4

 

Ingredients

  • 2 carrots, diced

  • 2 celery sticks, diced

  • 1 onion, chopped

  • 1 x 400g tin green or brown lentils, drained

  • 1 x 400g tin chopped tomatoes

  • 1 tbsp tomato purée

  • 2 tbsp Forest Barbecue Rub

  • 2 tbsp olive oil

  • 150ml stock

  • 1 tbsp honey or brown sugar

 

Method

  1. Preheat the oven to 190°C fan.

  2. Combine the carrots, celery, onion, lentils, tomatoes, tomato purée, stock, honey and Forest Barbecue Rub in an ovenproof dish.

  3. Stir well and drizzle with the olive oil.

  4. Cover with foil and bake for 25 minutes.

  5. Remove the foil, stir, then bake uncovered for a further 10 minutes until slightly thickened.

  6. Serve hot with crusty bread, rice or baked potatoes.

Highland Chicken & Root Vegetable Traybake

​This is the sort of meal that suits a busy weeknight just as well as a relaxed gathering. Tender chicken, sweet roasted roots and the gentle savoury warmth of Highland Seasoning make this a real favourite.

Prep time: 15 minutes
Cook time: 45 minutes

Serves: 4 to 6

 

Ingredients

  • 6 chicken thighs or drumsticks

  • 700g potatoes, cut into chunks

  • 2 carrots, thickly sliced

  • 2 parsnips, peeled and cut into batons

  • 1 red onion, cut into wedges

  • 2 tbsp olive oil

  • 2 tbsp Highland Seasoning

  • 150ml chicken stock

 

Method

  1. Preheat the oven to 200°C fan.

  2. Place the potatoes, carrots, parsnips and onion in a roasting tray.

  3. Drizzle with the olive oil and sprinkle over the Highland Seasoning.

  4. Toss well to coat.

  5. Nestle the chicken pieces on top and pour the stock around the tray.

  6. Roast for 45 minutes until the chicken is golden and cooked through and the vegetables are tender.

  7. Spoon over the pan juices before serving.

Highland Beef Mince, Oat & Vegetable Oven Supper

​A thrifty, practical family dish with lovely depth of flavour. The porridge oats help stretch the mince while keeping everything rich and comforting. This is a very useful recipe for batch cooking and reheating.rite.

Prep time: 15 minutes
Cook time: 40 minutes

 

Ingredients

  • 500g beef mince

  • 1 onion, finely chopped

  • 2 carrots, finely diced

  • 1 small leek, sliced

  • 2 tbsp Highland Seasoning

  • 2 tbsp porridge oats

  • 1 tbsp tomato purée

  • 400ml beef stock

  • 1 tbsp oil

  • 2 tbsp chopped parsley

 

Method

  1. Preheat the oven to 190°C fan.

  2. Heat the oil in a frying pan and cook the onion, carrot and leek for 5 minutes until softened.

  3. Add the mince and cook until browned.

  4. Stir in the Highland Seasoning, oats and tomato purée.

  5. Pour in the stock and bring to a simmer.

  6. Transfer to an ovenproof dish and bake uncovered for 25 minutes until rich and thickened.

  7. Scatter with parsley and serve.

Highland Butter Bean, Tomato & Courgette Bake

This easy meat-free bake is built from simple pantry ingredients and fresh vegetables, making it a very handy recipe for everyday cooking. It is warming, wholesome and full of gentle flavour.

Serves: 4
Prep time: 15 minutes
Cook time: 35 minutes

 

Ingredients

  • 2 courgettes, sliced

  • 1 onion, sliced

  • 2 garlic cloves, crushed

  • 2 x 400g tins butter beans, drained

  • 1 x 400g tin chopped tomatoes

  • 2 tbsp Highland Seasoning

  • 2 tbsp olive oil

  • 100ml stock

  • 50g grated cheese or breadcrumbs, optional

 

Method

  1. Preheat the oven to 190°C fan.

  2. Place the courgettes, onion, garlic, butter beans, chopped tomatoes, seasoning, olive oil and stock into an ovenproof dish.

  3. Stir everything together well.

  4. Top with cheese or breadcrumbs if using.

  5. Bake for 35 minutes until bubbling and lightly golden.

  6. Serve with crusty bread, rice or baked potatoes.

Meg’s Barbecue Seasoning Trio

Barbecue cooking is all about bold flavour and relaxed gatherings around good food.

​

The Barbecue Seasoning Trio was created to bring deep, smoky flavour to everything from grilled meats to roasted vegetables and quick traybakes. Each blend adds a balanced mix of spice, warmth and savoury depth that works equally well on the barbecue, in the oven, or in a frying pan.

These blends make it easy to create dishes that taste like they have been cooking slowly over fire — even on a busy weeknight.

Barbecue Grill Fire
Peri Peri Grilled Chicken Skewers with Lemon and Garlic

There is something wonderfully sociable about skewers sizzling over hot coals. These peri peri chicken skewers cook quickly and develop a beautiful char on the outside while staying tender within. A squeeze of lemon at the end brightens the heat of the seasoning and makes them completely irresistible.

Preparation Time: 20 minutes

Cooking Time: 12–15 minutes

Servings: 4

Ingredients

  • 600g boneless chicken thighs, cut into chunks

  • 2 tbsp Peri Peri Barbecue seasoning

  • 3 tbsp olive oil

  • 2 garlic cloves, crushed

  • Juice of 1 lemon

  • 1 red pepper, cut into chunks

  • 1 red onion, cut into wedges

  • Wooden or metal skewers

  • Fresh parsley, chopped

Method

  1. In a bowl combine olive oil, Peri Peri Barbecue seasoning, garlic and lemon juice.

  2. Add the chicken pieces and toss well to coat. Leave to marinate for at least 15 minutes.

  3. Thread chicken, red pepper and onion alternately onto skewers.

  4. Preheat the barbecue to medium-high heat.

  5. Grill the skewers for 12–15 minutes, turning regularly, until the chicken is cooked through and lightly charred.

  6. Sprinkle with chopped parsley and serve with flatbreads and a simple salad.​​​​​​​​​​​​​​​

  • 500g large raw king prawns, peeled with tails on

  • 1½ tbsp Peri Peri Barbecue seasoning

  • 2 tbsp olive oil

  • 2 garlic cloves, crushed

  • Zest and juice of 1 lemon

  • Fresh coriander or parsley

  • Lemon wedges, to serve

Method

  1. In a bowl mix olive oil, Peri Peri seasoning, garlic, lemon zest and juice.

  2. Add the prawns and toss gently to coat.

  3. Thread onto skewers or place in a grill basket.

  4. Grill over a hot barbecue for 2–3 minutes per side until pink and lightly charred.

  5. Sprinkle with fresh herbs and serve immediately with lemon wedges.

  • 4 corn on the cob

  • 60g softened butter

  • 1 tbsp Peri Peri Barbecue seasoning

  • 1 tsp honey

  • Juice of ½ lime

  • Small handful chopped coriander

 

Method

  1. Mix the butter, Peri Peri seasoning, honey and lime juice together.

  2. Preheat the barbecue to medium heat.

  3. Grill the corn, turning occasionally, for about 10–12 minutes until lightly charred.

  4. Brush generously with the peri peri butter.

  5. Scatter over chopped coriander before serving

A good steak needs very little embellishment, but a light dusting of smoky barbecue seasoning adds depth and enhances the flavour of the meat beautifully.

Preparation Time: 10 minutes
Cooking Time: 8–10 minutes

Ingredients

  • 4 ribeye steaks

  • 2 tbsp Smoky Barbecue seasoning

  • 2 tbsp olive oil

  • Sea salt

  • Freshly ground black pepper

  • 20g butter

  • Fresh thyme sprigs

 

Method

  1. Rub the steaks with olive oil and Smoky Barbecue seasoning.

  2. Leave at room temperature for 10 minutes.

  3. Preheat the barbecue to high heat.

  4. Grill the steaks for 3–4 minutes per side for medium-rare (adjust to taste).

  5. Rest the steaks for 5 minutes with a small knob of butter and thyme on top.

  6. Season lightly with salt and pepper before serving.

These juicy burgers are full of comforting flavour. Apple adds sweetness and moisture, while the smoky seasoning brings warmth and depth.

Ingredients

  • 500g pork mince

  • 1 tbsp Smoky Barbecue seasoning

  • 1 small apple, grated

  • 40g breadcrumbs

  • 1 egg

  • 1 tsp Dijon mustard

  • 1 tbsp chopped parsley

  • 4 burger buns

  • Lettuce and tomato slices

 

Method

  1. In a bowl mix pork mince, grated apple, breadcrumbs, egg, mustard, Smoky Barbecue seasoning and parsley.

  2. Shape into four burger patties.

  3. Preheat the barbecue to medium-high heat.

  4. Grill the burgers for 5–6 minutes per side until cooked through.

  5. Toast the buns lightly on the grill.

  6. Serve with lettuce, tomato and your favourite sauce.

  • 4 large Portobello mushrooms

  • 2 tbsp olive oil

  • 1½ tbsp Smoky Barbecue seasoning

  • 2 garlic cloves, crushed

  • 1 tbsp balsamic vinegar

  • Fresh thyme or parsley

 

Method

  1. Mix olive oil, Smoky Barbecue seasoning, garlic and balsamic vinegar.

  2. Brush the mixture over the mushrooms.

  3. Place mushrooms gill-side down on the barbecue.

  4. Grill for about 5 minutes, then turn and cook for another 5 minutes.

  5. Finish with fresh herbs and serve hot.

  5. Serve with flatbreads, yoghurt and salad.

  • 1 aubergine, sliced

  • 2 courgettes, sliced lengthways

  • 2 red peppers, quartered

  • 1 red onion, cut into wedges

  • 3 tbsp olive oil

  • 1½ tbsp Mediterranean Barbecue seasoning

  • 100g feta cheese

  • Fresh basil or parsley

 

Method

  1. Toss all vegetables in olive oil and Mediterranean Barbecue seasoning.

  2. Grill over medium heat for 10–15 minutes, turning occasionally.

  3. Arrange on a platter.

  4. Crumble feta over the vegetables and scatter with fresh herbs

Method

  1. Mix olive oil, Mediterranean seasoning, lemon zest, lemon juice and garlic.

  2. Brush the mixture over the fish fillets.

  3. Place the fish skin-side down on a hot grill.

  4. Cook for about 6–8 minutes until the flesh flakes easily.

  5. Finish with fresh herbs and serve with lemon wedges.
