Hospitality Consultancy

Practical Support to Improve Margins, Reduce Waste and Strengthen Your Team

Running a successful hospitality business takes more than serving excellent food. Menus must be commercially sound, stock carefully controlled, roles clearly defined and every member of the team confident about what is expected of them.

Drawing on more than 30 years of experience in professional kitchens, gastro pubs, private households, teaching and hospitality consultancy, Meg provides practical support for independent hotels, inns, cafés, restaurants and holiday businesses across Argyll.

Every consultancy project is tailored to the needs of the individual business. You may need help with one immediate challenge or a broader review of your food operation, staffing and internal systems.

Profitable Menu Planning and Costing - Create Food People Want to Order at Prices That Work for Your Business

A creative menu must also be commercially viable. Meg can help you develop an appealing, seasonal menu that makes intelligent use of ingredients, reduces unnecessary waste and protects your gross profit.

Menu consultancy can include:

  • General menu planning and menu reviews

  • Seasonal, low-waste and high-margin menu development

  • Full recipe and menu-item costing

  • Gross profit targets by menu section

  • Portion-control guidance

  • Pricing recommendations

  • Ingredient crossover between dishes

  • Rooms and food-service crossover

  • Support for head chefs responsible for menu costing

  • Practical menu systems and costing templates

Many talented chefs are wonderfully creative but have received little formal training in food costs, margins and commercial menu planning. Meg can work alongside your head chef, helping them develop the knowledge and practical tools needed to make more confident and profitable decisions.

Stock Control and Waste Reduction Protect Your Stock, Reduce Waste and Improve Accountability

Over-ordering, inconsistent portioning, spoilage, poor storage and unrecorded stock usage can quickly erode the profit of a hospitality business.

Meg can help establish straightforward stock-control systems for the principal areas of your operation, including:

  • Kitchen

  • Bar

  • Housekeeping

  • Food and beverage stores

  • Breakfast and café supplies

  • Guest-room and accommodation stock

The aim is to give owners and managers a clearer understanding of what is being purchased, used, wasted or lost.

Systems are designed to improve accountability, reduce avoidable waste and minimise unexplained stock losses without creating unnecessary paperwork for an already busy team.

Led by a classically trained chef, cookbook author and experienced teacher, each demonstration combines professional knowledge, practical techniques and a warm, approachable style.

Possible themes include:

  • Seasonal Scottish cooking

  • Fermenting and preserving

  • Cooking confidently with herbs and spices

  • Stress-free entertaining

  • Baking and traditional recipes

  • Making the most of local produce

  • Reducing kitchen waste

Rebecca Capewell "Meg can cook!!!!" We arrived in Scotland yesterday and were unable to get a tesco delivery until this evening (booked 2 weeks ago), so we needed to source some dinner last night. No where local was doing hot food, and the nearest restaurant was an hour's drive. Having spend 8 hours travelling we didnt fancy more time in the car. The social club recommended Megs..... a quick phone call and 10 mins later the food arrived with us. Absolutely amazing service from a lovely lady. We had the curries and my son had mac cheese. We thoroughly enjoyed the curries, both agreeing they could easily have come from a top quality Indian takeaway ( and big portions) My son caused insult by stating the mac cheese was better than mine!!! So if your looking for a wholesome, home cooked take away, even at short notice.....this is a must. Thank you Meg. X

Wendy Acheson Meg’s Scottish Kitchen did our rehearsal dinner food for 19 people April 24th 2026. How really lucky were we to find Meg and her husband Simon!! We couldn’t have asked for a better meal and everyone said it was the best meal they had enjoyed while in Scotland! The butter Chicken I am usually dreaming about so since they live not too far from Taynuilt we can arrange to end that craving when needed. Meg’s history of being a great chef shows through in her combination of flavors, but also since you are usually bringing this back home to reheat the chicken is still moist and succulent, the pasta is firm, rice reheats perfectly everything will reheat like you just pulled it off yourself. She uses fine ingredients and has that eye for detail. It comes with packaging that has that same keen awareness to this is going to be special. Great directions on how to handle and reheat. Lovely pretty stickers on the boxes. If you want to pick up for a friend as a nice surprise or like me dream of the original meal and keep coming back. I’m a foodie at heart and I will be going back. Thank you two for what you are creating in this wee area of our world! Wendy and Michelle
