These sizzling chicken fajitas are a total crowd-pleaser — quick to make, packed with flavour, and perfect for a midweek dinner or weekend feast. Marinated in my smoky Mexican spice mix, the chicken stays juicy and tender, while colourful peppers bring a burst of freshness to every bite. Serve with warm tortillas, your favourite toppings, and enjoy a taste of fiesta at home!

Ingredients
2 chicken breasts, thinly sliced
1 red and 1 yellow pepper, sliced
1 red onion, sliced
2 tsp Mexican spice mix
Juice of ½ lime
1 tbsp olive oil
Salt to taste
Preparation
1. Toss chicken and veg with spice mix, lime juice, oil, and salt. If time allows marinade for 30 minutes
2. Sizzle in a hot pan for 8–10 minutes until charred and cooked through.
