These peri peri vegetable wraps are bursting with bold flavours and vibrant colours. Roasted veg tossed in my fiery peri peri spice mix bring just the right amount of heat, balanced with creamy avocado, crisp salad, and a drizzle of cooling yoghurt or tahini. Perfect for a quick lunch, a casual dinner, or entertaining with a twist — they’re fresh, satisfying, and full of spice

Ingredients
1 courgette, cubed
1 red pepper, cubed
1 yellow pepper, cubed
2 red onion, wedges
1–2 tsp Peri Peri spice mix
Olive oil, salt
Tortilla wraps, hummus or yoghurt to serve
Preparation
Preheat oven to 200°C
1. Toss vegetables with oil, spice mix and salt.
2. Roast at for 20–25 minutes.
3. Pile into wraps with hummus or yoghurt.
