About the Recipe

This colourful Mexican grain salad is bursting with bold flavours and wholesome ingredients. Packed with fluffy grains, crunchy veg, black beans, and tossed in a zesty lime dressing with a hint of my Mexican spice mix, it’s the perfect side for barbecues, picnics, or a light lunch on its own. Bright, nourishing, and full of texture — it’s sunshine in a bowl!

Ingredients

200g cooked rice, quinoa or bulgur wheat

1 tin black beans, drained

1 red pepper, diced

1 small red onion, finely chopped

Handful fresh coriander, chopped

Juice of 1 lime

1 tbsp olive oil

1 tsp Mexican spice mix

Salt to taste

Preparation

1.     Mix everything together in a large bowl.

2.     Taste, season, and chill before serving.
