This curried veggie traybake is a one-tray wonder — bursting with colour, flavour, and goodness. Tossed in my warming curry spice mix, seasonal vegetables roast to golden perfection, their edges crisp and caramelised while the spices bring depth and aroma. It’s easy, nourishing, and perfect for busy weeknights or lazy Sundays. Serve with flatbreads, yoghurt, or a handful of fresh herbs for a simple but satisfying meal.

Ingredients
1 sweet potato, cubed
2 carrots, sliced
1 courgette, sliced
1 tin chickpeas, drained
2 tsp curry spice mix
Olive oil, salt
Preparation
Preheat oven to 200°C
1. Toss all ingredients with oil and spice mix.
2. Spread on a tray and roast at for 30–35 minutes.
