There’s something so joyful about picking berries straight from the canes, hands stained pink and baskets brimming. It takes me right back to childhood summers, when my mother—an excellent jam maker—would fill the house with the intoxicating scent of bubbling fruit and sugar. Even now, making jam transports me to her kitchen and those precious moments of tasting the very first spoonful of the season

Raspberry Cranachan: A Classic Scottish Dessert

When it comes to traditional Scottish puddings, cranachan has my heart. Sweet Scottish raspberries layered with toasted oats and heather-honey cream, often with a splash of whisky to cut through the sweetness—it’s a dessert that’s as beautiful as it is delicious. And the best part? It’s wonderfully simple to make. You can have this elegant, crowd-pleasing dessert on the table in under 20 minutes.

Raspberry cranachan is perfect for summer gatherings, easy dinners, or simply as a special treat for yourself. The combination of tart raspberries, soft clouds of cream, and the crunch of toasted oats is a celebration of Scottish summer on a spoon.

This dainty summer dessert is simple, quick, and tastes every bit as good as it looks. Whether you’re enjoying the fruits of your own garden, a local farm, or simply the best you can find at your greengrocer, raspberry cranachan is a beautiful way to celebrate the season.

 

Ingredients

60g rolled oats

200g fresh Scottish raspberries

1 tbsp icing sugar

1 tsp vanilla extract

600ml double cream

4 tbsp honey

3 tbsp Scottish whisky

Method

  1. Toast the oats: Place the oats in a dry frying pan over medium heat. Stir continuously until they are golden and fragrant—this will only take a few minutes. Remove from the heat and allow to cool.

  2. Make the raspberry purée: Blitz 100g of the raspberries with the icing sugar in a food processor until smooth. Set aside.

  3. Whip the cream: In a large bowl, whisk the double cream until it forms soft peaks. Gently fold in the vanilla, honey, and whisky.

  4. Add the oats: Reserve a couple of spoonful's

    of the toasted oats for garnish. Stir the remaining oats through the cream mixture.

  5. Assemble the cranachan: Lightly fold the raspberry purée through the cream to create a ripple effect. In serving glasses, layer some fresh raspberries, then spoon over the cream mixture. Finish with more raspberries and a final sprinkle of toasted oats.
