There’s something truly magical about a slow weekend brunch. That delicious halfway point between breakfast and lunch where the pace slows down, the coffee is strong, the food is plentiful, and conversation lingers longer than usual.

Because most of our friends and family live a few hours away, when they come to visit it’s not just a dinner, it’s a whole weekend affair. And that’s where brunch shines. It’s relaxed. It’s generous. And with a little forward planning, it lets the host sit down and enjoy the feast too.

So, whether you're hosting overnight guests or simply want to make the most of a lazy Sunday morning, here are some stress-free, seasonal brunch recipes that feel indulgent but

are surprisingly easy to prepare.

The Joy of Brunching with Friends

Some of my happiest kitchen memories are from brunches that stretched into the afternoon — where no one’s watching the clock, dogs are snoozing under the table, and someone’s halfway through their second cafetière. There’s always a mix of sweet and savoury, pots of jam, jugs of juice, and a table full of love.

The key? Keep it simple. Prep the night before where you can. Lay the table in advance. Have jugs of water and coffee ready to go. And let people help themselves — it’s more fun that way.

🍳Baked Herby Eggs with Summer Greens & Feta

This one’s ideal for feeding a crowd without fuss — everything bakes in one dish, and it looks gorgeous straight from the oven.

Serves 4–6

Ingredients:

  • A good glug of olive oil

  • 1 leek or a small onion, finely sliced

  • 2 cloves garlic, chopped

  • A few handfuls of seasonal greens (kale, spinach, courgette ribbons)

  • 6–8 large free-range eggs

  • 100g feta, crumbled

  • Fresh herbs: dill, parsley, or chives

  • Salt & pepper

To serve: crusty sourdough toast, hot sauce, Greek yoghurt

Method:

  1. Preheat your oven to 180°C fan.

  2. In a large ovenproof frying pan, gently cook the leek/onion and garlic in olive oil until soft.

  3. Add the greens and let them wilt for a few minutes. Season well.

  4. Use a spoon to make little ‘wells’ in the greens and crack in the eggs.

  5. Scatter with crumbled feta and fresh herbs.

  6. Bake for 8–10 minutes or until the egg whites are just set but the yolks are still runny.

  7. Serve with toast, yoghurt and maybe a splash of hot sauce.

This dish can be made veggie or topped with smoked salmon or crispy pancetta for a meatier version.


Buttermilk Oat Pancakes with Berries & Maple

These pancakes are soft, fluffy, and made with oats for a satisfying bite. Perfect with

ree

berries and a drizzle of maple syrup.

Serves 4

Ingredients:

  • 150g self-raising flour

  • 50g rolled oats

  • 1 tsp baking powder

  • 2 eggs

  • 300ml buttermilk (or milk + 1 tbsp lemon juice)

  • 1 tbsp melted butter or oil

  • Pinch of salt

To serve: raspberries, strawberries, yoghurt, maple syrup, toasted seeds or nuts

Method:

  1. Mix the dry ingredients in a bowl.

  2. In a jug, whisk the eggs with the buttermilk and melted butter.

  3. Pour into the dry mix and stir to combine. Don’t overmix — a few lumps are fine.

  4. Cook on a lightly oiled pan over medium heat until bubbles form, then flip and cook until golden.

  5. Stack ‘em high with yoghurt, berries, maple syrup and crunchy bits.

Pro tip: Make the batter the night before and keep it in the fridge, ready to cook.
