This rustic tomato sauce is a kitchen essential — simple, hearty, and full of depth. Made with ripe tomatoes, garlic, herbs, and a good glug of olive oil, it’s slow-cooked to bring out a naturally sweet, savoury richness. Whether you’re tossing it through pasta, spooning it over meatballs, or layering it into lasagne, this sauce brings comfort and flavour to any dish.

Ingredients
1 tbsp olive oil
15g butter
2 garlic cloves, minced
1 small onion, chopped
2 x 400g tin chopped tomatoes
1–2 tsp Italian herb blend
Salt and pepper
pinch of sugar (optional)
Preparation
1. Sauté onion and garlic in olive oil until soft, about 20 minutes.
2. Add chopped tomatoes, herb mix, salt and sugar.
3. Simmer 20–25 minutes until thick and rich.
