Fiery, zesty, and full of attitude — this peri peri chicken is a real showstopper. Marinated in my homemade peri peri spice mix, it’s bursting with punchy flavours of chilli, garlic, and citrus. Whether you’re roasting, grilling, or barbecuing, the result is juicy, spicy chicken with a deliciously charred finish. Serve it with crispy potatoes, slaw, or a simple salad — and don’t forget the napkins!

Ingredients
4 - 6 chicken thighs (bone-in or boneless)
1 - 2 tsp Peri Peri spice mix – depending on how hot you like it
1 tbsp olive oil
Juice of ½ lemon
Salt to taste
Preparation
1. Rub chicken with spice mix, lemon juice, olive oil and salt.
2. Marinate for 30 minutes (or overnight for extra flavour).
3. Roast at 200°C for 30–35 minutes or grill until crisp and cooked through.
