About the Recipe
These Italian roasted vegetables are a celebration of simple ingredients done right — bursting with colour, caramelised edges, and the irresistible aroma of herbs and garlic. Tossed in olive oil and my signature Italian spice mix, they roast to perfection and bring a rustic charm to any meal. Serve them as a side, stir them through pasta, or pile them onto crusty bread for a true taste of the Mediterranean.

Ingredients
1 courgette, chopped
1 red onion, wedges
1 red pepper, chopped
Handful cherry tomatoes
1–2 tsp Italian herb blend
Olive oil, salt
Preparation
Preheat the oven to 200°C
1. Toss vegetables with oil, spice blend and salt.
2. Roast in the preheated oven for 30 minutes until golden. toss halfway through cooking
