Ingredients
2 chicken breasts, diced
1 onion, finely chopped
2 garlic cloves, minced
1 tsp grated ginger
2 tsp curry spice mix
200ml coconut milk
1 tbsp tomato purée
Oil, salt
Preparation
1. Sauté onion, garlic, and ginger in oil until soft.
2. Stir in curry mix and tomato purée, cook for 1 min.
3. Add chicken and cook until sealed, then pour in coconut milk.
4. Simmer gently for 20 minutes until thick and tender.
