Classic Italian Flair

Inspired by sun drenched harvests and rustic home cooking, my Italian spice blend is all about bringing warmth and simplicity to the table. With notes of oregano, basil, rosemary and garlic, it’s the perfect companion for everything from pasta sauces to jazzing up roasted vegetables.

Use it to add an Italian twist to midweek meals or level up your weekend bakes. Think easy, elegant and full of soul.

Italian ingredients

Rustic Tomato Pasta Sauce

Your go-to base for countless Italian dishes. Toss with pasta, use on pizza bases, or as a sauce for baked aubergine or chicken.

Serves 6

Ingredients

1 small onion, chopped

3 tbsp olive oil

2 garlic cloves, minced

2 x 400g tin chopped tomatoes

1–2 tsp Italian herb blend

Salt and pepper

pinch of sugar (optional)

Method

  1. Sauté onion and garlic in olive oil until soft, about 20 minutes.

  2. Add chopped tomatoes, herb mix, seasoning and sugar if using.

  3. Simmer 20–25 minutes until thick and rich.

Garlic bread

Herby Garlic Bread

Crispy, golden, and full of flavour. Serve with pasta, soups, or antipasti platters. You will never go back to shop bought again.

serves 4

Ingredients

1 baguette or ciabatta

2 tbsp softened butter or olive oil

1 garlic clove, minced

1 tsp Italian herb blend

Pinch of salt

Method

Preheat oven to 180°C

  1. Mix butter, garlic, herbs and salt.

  2. Slice bread and spread with mixture.

  3. Wrap in foil and bake in the preheated oven for 10–15 minutes.

Italian Roast Vegetables

Easy and elegant — perfect hot or cold. Serve with pasta, as a side dish, or piled on toasted sourdough with mozzarella.

serves 4

Ingredients

1 courgette, chopped

1 red onion, wedges

1 red pepper, chopped

1 yellow pepper, chopped

8 cloves of garlic, unpeeled

1–2 tsp Italian herb blend

3 tbsp olive oil,

Salt and pepper

250g cherry tomatoes

Method

Preheat the oven to 200°C

  1. Toss vegetables apart from the cherry tomatoes with oil, spice blend, salt. and pepper.

  2. Roast in the preheated oven for 15 minutes.

  3. Remove the tray from the oven  toss the vegetables, scatter over the cherry tomatoes and return to the oven for a further 15 minutes until the vegetables are cooked and the tomatoes are starting to burst burst.

dipping oil

Italian Herb Oil

Flavourful and fabulous for dipping or drizzling.

Ingredients

3 tbsp olive oil

1 tbsp balsamic vinegar

1 tsp Italian herb blend

Pinch of sea salt

Method

Whisk together the ingredients, don’t panic as it will separate.  Use it for dipping crusty bread, drizzling over salads, or brushing onto grilled meats and vegetables.
