Cucumber, Yoghurt & Mint Salad

There’s more to cucumber than soggy sandwiches. Want an easy yet impressive side that’s cool, creamy, and oh-so-refreshing? This is the perfect little dish to serve alongside spicy mains, summer grills, or as a light lunch all on its own. Crisp cucumber, silky yoghurt, and fresh mint – it’s a simple classic that never misses.
🥒 Ingredients
1 large cucumber, thinly sliced or diced, peeled and deseeded if home grown.
200g natural yoghurt or Greek yoghurt
A small handful of fresh mint leaves, finely chopped
Juice of half a lemon
½ tsp sea salt
A crack of black pepper
Optional: A drizzle of olive oil and a sprinkle of sumac or chilli flakes to finish
🥗 Method
Place the cucumber in a bowl and lightly sprinkle with salt. Let it sit for 5-10 minutes to draw out a little water (this keeps your salad lovely and crisp).
Drain any excess water, then stir through the yoghurt, mint, lemon juice, and a good crack of black pepper.
Taste and adjust seasoning as you like.
Finish with a drizzle of olive oil and a dusting of sumac or chilli flakes if you fancy a little kick.

No yoghurt? Try buttermilk, kefir, or coconut yoghurt for a dairy-free twist.
No mint? Fresh dill or basil works beautifully.

With fresh cucumber, fragrant mint, and a splash of sparkle. It’s light, it’s elegant, and it’s the easiest way to keep cool without fuss.
Ingredients
Half a cucumber, thinly sliced
A small handful of fresh mint leaves
Juice of half a lime (or lemon if you prefer)
1 tsp sugar or honey (optional)
Sparkling water (or swap for soda or tonic)
Plenty of ice

In a jug or glass, gently muddle the cucumber, mint, lime juice, and sugar to release all the fresh flavours.

Tomato & Cucumber Salad with Feta & Herbs
Bright, crunchy, and packed with flavour – this salad is your go-to for quick lunches, summer picnics, or as a vibrant side dish. It’s one of those throw-it-together-in-minutes recipes that still feels a little bit fancy.
🌿 Ingredients
1 x 400g tin chickpeas, drained and rinsed
1 cucumber, diced
100g feta, crumbled
A small handful of fresh parsley, chopped
Zest and juice of ½ lemon
2 tbsp extra virgin olive oil
Sea salt & freshly ground black pepper
Optional A few torn mint leaves or a pinch of chilli flakes for a little extra lift
🥣 Method
Pop the chickpeas, cucumber, feta and parsley into a mixing bowl.
Drizzle over the olive oil, squeeze in the lemon juice, and sprinkle over the zest.
Season with sea salt and black pepper to taste.
Toss everything gently to combine – no need to overthink it, just let the lovely fresh ingredients shine.
