Southern Heat with a Scottish Twist

My Cajun spice mix brings the bold, smoky flavours of the American South straight to your kitchen. Think paprika, garlic, thyme, and a gentle chilli kick all carefully blended to help you create deeply savoury dishes with minimal effort.

This mix is brilliant for jazzing up chicken, fish, vegetables and rice. Whether you're after a quick midweek dinner or something a little special for the weekend, these recipes are full of soul, spice and comfort.

Cajun Salmon.

Cajun Salmon

Crispy on the outside, flaky on the inside and bursting with flavour. Serve with a wedge of lemon, herby rice, and a dollop of Cajun or garlic dip.

Serves 2

Ingredients

2 salmon fillets

1–2 tsp Cajun spice mix

1 tbsp olive oil

Lemon wedge

Salt and pepper

Method

  1. Rub salmon with Cajun spice, oil, and a pinch of salt. If time allows marinate in the spice mix for 20 minutes.

  2. Sear in a hot pan for 4 mins per side or roast in a preheated oven 200°C for 10–12 minutes.

Cajun Chicken tenders

Cajun Chicken Tenders

Crispy, spicy and family-friendly. Dip in spicy mayo or serve in wraps with lettuce and avocado.

Serves 4

Ingredients

egg

3 chicken breasts, sliced into strips

2 tsp Cajun spice mix

4 tbsp plain flour

Salt and pepper

1 tbsp olive oil

Method

  1. Beat the egg in a shallow bowl.

  2. Dip the chicken strips in the beaten egg.

  3. In another shallow bowl mix flour, Cajun spice, salt and pepper.

  4. Coat the chicken in the spiced flour.

  5. Heat oil in a pan and fry until golden and cooked through.

Rice bowl

Cajun Corn and Rice Bowl

Quick, satisfying, and great for lunch, it can be packed for lunch on the go or for a picnic.

Serves 2

Ingredients

2 tbsp olive oil

1 clove of garlic, crushed

1 red pepper, diced

1 tsp Cajun spice mix

Salt and pepper

250g cooked rice

6 spring onion, sliced

200g sweetcorn

Method

  1. Sauté the garlic and pepper in oil with Cajun spice on a medium heat for 8 minutes.

  2. Add in the rice with spring onion and sweetcorn, cook for a further 5 minutes.

  3. Top with grilled prawns, chicken or sliced avocado and a squeeze of lime.

Cajun mayo

Cajun Dip

Zingy and versatile — ideal for dipping, drizzling or dolloping.

Ingredients

3 tbsp sour cream, crème fraiche or mayonnaises

1 tsp Cajun spice mix

Squeeze of lemon

Salt and pepper

Method

  1. In a bowl whisk all the ingredients together.

  2. Drizzle over grilled meats, dip in wedges, or use it to dress a warm potato salad.
